With a fantastic new chef at the helm pledging to source all ingredients locally and a new retail shop stocking Cornish treats a West Cornwall hotel is doing its bit to keep it local.
The Pedn Olva Hotel in St Ives has welcomed Mark Devonshire to the team as head chef. Most recently, Mark spent more than 15-years at Rick Stein's Seafood School in Padstow, including seven years as head lecturer.
Mark has already made an impact on the hotel's Lookout restaurant launching fantastic new evening and daytime menus. Diners can expect locally-sourced food complimented by fantastic sea views and an impressive selection of wines from St Austell Brewery.
Hotel managers Andrew Reilly and Drew Sanderson said they were really excited about the latest changes.
"We're delighted to have Mark on board with us as head chef and his vast experience will really help establish the Pedn Olva on the foodie map. From delicious platters and open sandwiches for a relaxed lunch, through to locally sourced fresh seafood dishes in the evening, the restaurant's new menus will suit all taste buds and pockets at whatever time of the day it is.
" It's an exciting time for us at the hotel, and as well as Mark's arrival, we're pleased to have completed renovating our five deluxe rooms and have also opened a new Cornish shop in the hotel. It means we're able to offer both hotel guests and non-residents the very best of Cornwall under one roof."
Mark Devonshire is the latest top chef to join the St Austell Brewery's estate. Last year top chef Paul Ripley became tenant of the St Kew Inn after making a name for himself and gaining a Michelin star at his North Cornwall restaurant, Ripley's, while in March the Brewery announced that Rick Stein was was taking the helm at the Cornish Arms in St Merryn.
The Lookout and the Pedn-Olva Hotel enjoy a dramatic location perched on top of the rocks at West Porthminster Beach, St Ives, with exquisite and ever-changing sea views through every season.
Naturally for a restaurant so closely linked to the sea, and with Mark's experience, fresh fish and seafood feature prominently on the menu, with dishes such as:
- Trio of Cornish fish with a salsa Verdi dressing
- Pan fried cod fillet with leek and mussel sauce
Other examples from the menu include:
- Char grilled Cornish sirloin steak with red onion and tomato salad
- Homemade pasta with roasted vegetables and pesto
The more informal lunch options include:
- Char grilled chicken, tarragon mayo, avocado, wild rocket open sandwich, served on hand made toasted artisan sour dough bread
- Grilled St Ives mackerel fillet with Thai flavours
- Platter for two, including smoked salmon, dressed crab, tiger prawns, lemon mayonnaise
Visitors will also find a specials board - which changes every day - and an exciting and extensive new wine list developed by the hotel team working with St Austell Brewery's expert wine buyer Xenia Irwin MW.
